昨天太累了, 真是沒想多談 ...

永遠都不曉得冬至在何時, 昨天看人家貼文以爲昨天冬至, 趕快趕快做湯圓.. :P
好久沒做, 以爲OK, 但手不聽腦子想好的, 來亂的, 真不知會如何 ...

沒想到, 果然是出乎意料的好吃,
特製的紅豆沙, 有Q度, 有嚼勁的外皮, 口感好,味道好..還有別忘了濃鬱的紅豆湯 :)

福袋饅頭Fortune Bag


嘗試不同的材料, 永遠充滿了樂趣, 尤其搭配出來的味道是不錯時,就好有滿足感。但是,最困難的是取名字,要讓人聽了就大約知道是什麽而且想去嘗嘗, 這個還是有點難度。 這次就以造型取名吧,也把這個福氣送給老同學, 覺得挺有意義的。 吃了我做的福袋,大家要福福氣氣, 健健康康,所以用了對身體好的材料。

這次加了植物性的元素,院子裏自家種的,給饅頭加了顔色, 也加了養生 :)

Try to use different ingredients to make mantou is always full of fun, especially when the taste comes out is nice, having great satisfaction too. However, naming is the difficulty part. How to let people know about the food from its name is not easy. I named it from its shape, the fortune bag. Hopefully, people get it will receive the blessing of fortune. I had send this to my old classmate and his family.

The fortune bag mantou is made of healthy ingredients. I added "plant" element into it. The plant is grown in my garden. It makes the color to the mantou and lifts up our healthy.

茶麵 Cha Mian (Tea Noodles)


這算是本年度, 本人最滿意的作品,哈哈!茶麵用的是自個兒做的手工全麥麵。如果把蛋去除,這也可算是素食, 湯底不加肉,因爲本人爲了加多一點蛋白質, 所以給自個兒加了個蛋。

I guess this is my most satisfied "work" this year, haha. I made the noodles, the whole wheat noodles. The soup is nice and can be considered as vegetarian food if without egg. I just wanted to add more protein in my meal, so "one egg for me, please". :)

鷄肉漢堡Homemade Chicken Burger


今晚吃什麽之~ 鷄肉漢堡 + 玉米鷄湯 + 炒米粉

哈哈, 我一直以爲這個漢堡大餐已經張貼了原來還靜悄悄的藏著。 以前不會做麵包,都買現成的漢堡麵包,現在會做麵包,不自己做實在説不過去。從做麵包到準備内餡,如果沒空千萬別做這件事。但是,每天吃飯也會變得無聊, 只好 。。

這樣的晚餐也蠻健康的,鷄肉餡餅加了蔬菜,還有紅紅綠綠黃黃的蔬菜, 往桌上一攤,還挺美觀的,然後動手自己DIY漢堡, 好吃又好玩。通常漢堡會放生菜,但這不是生菜, 是出乎意外好吃的皺葉白菜。 生菜有種氣味, 家人不是很喜歡,生菜的種類很多,我也傻傻分不清楚 ..

Haha, I thought this post has already posted but it's still kept in the secret place. Before I know how to made burger bun, I used to buy the ready made but now I have to make it by myself. From cooking and preparing the fillings to making the burger buns, it really takes a lot of time. Thus, if you don't really have time for that, you better don't try. However, sometimes, you just feel boring with rice meal, so I just ...

It's quite a healthy meal. The chicken patty is added with some vegetable. Vegetable with red, green and yellow color laying on the top of table looked so nice. DIY burger is nice and fun ..

簡易泰式酸辣湯Simple Tomyam Spicy And Sour Soup

酸辣湯麵 Tomyam Noodles

我在想菜名的時候,我其實不能放泰國或泰式,這根本是我憑感覺去煮的,想了一想, 還是把“泰式”加進來了。謝謝泰國的同學煮了他們家鄉的的泰國酸辣湯給我吃。雖然是好久以前的事,那是第一次的味道,我已經當成是指標了。在煮的過程,努力尋找那個味,感恩感謝不在話下。


回國后有嘗試煮,不過那時候用的是現成的Tomyam塊,現在沒什麽印象了, 大概也沒什麽值得記得。外面賣的Tomyam又酸又辣,對我而言,有點太刺激了。

回鄉時,同學給了瘋柑和葉子,哈哈,我有煮泰式酸辣湯的主材料啦。又是非常感謝同學夫婦 把自家種的瘋柑給我 ,非常符合我的田園烹飪風。

來個簡版酸辣湯吧,煮了麵。有辣有酸,但吃了不會刺激腸胃。

後來,想吃海鮮酸辣湯, 就煮了酸辣蝦湯。
酸辣蝦湯 Tomyam Prawn Soup

What should I name it? Tomyam?  It's only a spicy and sour soup which I followed my sense to cook. I finally used the "TomYam" word to thank my Thai classmate who had cooked me her home country famous spicy and sour soup. Although it was long time ago, it was also my first taste  of TomYam soup. I felt  so grateful and thankful when I tried to find the taste of it while I was cooking the soup.

I tried to cook when I came back to my home country. I used tomyam cube. Nothing so special to have me recalled how it was. Tomyam sold at the food stalls is too spicy or sour to me sometimes.

When I backed to my home town, my classmate gave me some kaffir limes and leaves. They are the main ingredients of TomYam soup. I guessed it's my good chance to try cooking TomYam. I need to thank my classmate and his wife for giving me their precious kaffir limes and leaves which they grown.

I made a simplest spicy and sour soup and cooked with noodles. You will have taste of spicy and sour but mild to the stomach.

Later, when I felt like to have some seafood spicy and sour soup. I cooked  Tomyam Prawn Soup.

超軟蘿蔔牛奶100%全麥麵包Super Soft Carrot Milk Whole Wheat(100%) Buns

說到全麥,是很有挑戰性的。 他可能很硬,也可能味道沒那麽香。做的不好,可能吃起來像發糕。可是想到他比精緻高筋麵粉更好,還是要很努力去克服。

基本上如果沒添加,我用有機全麥粉,不會有像高粉那樣的筋度,也沒辦法包住空氣,所以不會發得很蓬。如果選擇吃全麥麵包,首先 你就得接受,他的口感一定不會和軟麵包一樣。其實,要吃健康的手工麵包,千萬不要和市面上的麵包相比。

這次做的麵包很軟,100%全麥, 很好。我最近沒去采購,用了簡單的材料。要口感更好, 可以加葡萄乾,蔓越莓乾,堅果等, 這樣也可以加些營養。

When talking about "whole wheat", it's really a challenge. The bread made of whole wheat can be hard and not so tasty. It could be taste like "Fa-Gao"(Chinese Steamed Cake) if something goes wrong. However, with the thought that it's better than fine high-gluten flour, I still should try harder.

Basically, without additives, I use organic whole wheat flour, it won't have much gluten as high-gluten flour and unable to wrap up the air, so it won't inflate much. If you choose to eat whole wheat bread, bear in mind, you should accept it won't taste like soft bread in first place. Little remind, never compare those healthy hand made bread with those sold at the bakery shops.

O! I can make it soft. I used 100% whole wheat flour this time. Good! Recently, I did go for shopping so I used simple ingredients. To make it taste better, you can add some raisins, dried cranberries ,nuts and etc. This will add more nutrition as well.

香蕉葉烤雞 Banana Leaf Baked Chicken


今晚吃什麽?~香蕉葉烤雞 + 滷蛋 + 清炒蔬菜

太多太多照片來不及上載,今天介紹的晚餐要家裏的“道具”幫幫忙,讓我們可以少累一點。鑊,鍋子,烤箱待命!

先準備好材料, 煮好蛋,鷄肉加入調味料腌製
1. 先煮鹵汁,加入煮好的水煮蛋,就可以交給鍋子,慢火煮。
2. 去院子剪了香蕉葉,鋪在烤盤,放入腌好的鷄肉,就可以交給烤爐。
3. 等差不多要開飯時,就可以炒菜了。

看似簡單,但準備材料,才是最累人的,把食物弄熟10到15分鐘,而備菜遠遠超過這個時間。因爲備菜很累,所以,把食物弄熟的這個步驟就交給鍋子,烤箱啦 :)

Today I would like to talk about how kitchen wares help to prepare dinner. Wok, pan and oven please get ready.

Prepare the ingredients, boil the eggs, marinate the chicken with seasoning .
1. Cook the sauce. When the boiled eggs are ready, add the sauce, then you can hand over to the pan to cook the eggs with low heat.
2. Cut the banana leaves from my garden, lay them on the grill pan and fill up with the marinated chicken. Now, you can pass it the oven.
3. Pan fry the vegetable just before the to start dinner.

Preparing the to cook always consumes more effort than cooking. When I am tired, I let the cook wares to do their job. Thus, I can steal some time to sit down. 

田園米粉~長豆素炒米粉Garden Long Bean Fried Rice Noodles

院子的長豆結了, 還不錯,比上次進步了, 收成好幾條。加上一些院子采摘的香料葉,弄個素炒米粉, 就有一個很對得起自己的午餐了。

Backyard had grown more long beans this time. I guess I have some improvement of growing long beans. Plucked some long beans and herbs to cook fried rice noodles, is a wonderful thing to make myself a lunch..

香菇鷄鷄肉包Mushroom Chicken Steam Bread


超白的包子, 細細軟軟的,看了就不想吃, 想吃包子的時候,就弄一些較健康的的吧,是很花時間,準備内陷再加上要做包子皮,所以,不能常做。
自己做包子,内陷也可以很隨意。

When I see the "super" white, the texture is tight and soft, I can only imagine how much additive is added. Thus, when I feel like to have some steam bread what we call it "bao" or "BaoZi", just make it healthier with healthy recipe.
Yes, it is very time consuming. From preparing the fillings to making the dough and shaping, it takes a lot of time, so I can't always make it, although it is a very good fast food. If you have some kept in the freezer, just take it out and steam it for 10 to 15 minutes and your meal is ready.
Homemade baozi is good to let you add any ingredients for the fillings.

寫到英文稿的時候才發現一直被我當成是“點心”的包子, 其實, 原來是名副其實的快餐。有能填飽肚子的麵皮,含有蛋白質的肉類或鷄蛋,還有蔬菜,把内陷包著拿去蒸,營養不流失, 又容易儲存,想想以後可以多做包子 ^_^

滷白蘿蔔 Stewed White Radish


想念這個滷白蘿蔔很久了,之前買白蘿蔔煮湯,那白蘿蔔的味道很不好, 好久都不敢買了, 不曉得加了些什麽。實在是非常愛吃,還是勇敢再嘗試,還好沒怪怪的味道。 就是喜歡加了很多料去燉煮,這樣一鍋就差不多夠一餐, 再弄個蔬菜, OK啦!

I missed this dish for very long time. The white radish is not always available in supermarket. I bought some before but found some odd smells while cooking. I was too worry to buy again never know what has been added. I really love the dishes with white radish, so I tried to buy some again. It's ok.

I love to put  a lot of ingredients to stew in one pot. A pot is enough for a meal. I will cook some vegetable to ensure balanced diet.

自製麵餅Secret Recipe Flour Cake

忙碌的我,餓了又要很快有得吃, 這個我稱他爲“麵餅”的東東,無論早餐或下午茶,都很好。他比pan cake 好吃, 又沒放泡打粉,也比印度煎餅來的健康,一點油,無油也行。爲方便我已經放入我要的材料,任何你喜歡的材料都行,做好之後,你要像吃pan cake的吃法也行,我喜歡鹹的就弄個香葱麵餅, 無拘的料理,讓你在忙碌的生活中可有些許的放鬆。

When I am busy, I need some "fast" food to fill up my stomach. This, what I called "flour cake", is always nice for breakfast and after tea. I would like to call it, "pan cake" but it's very different from pan cake. It's tastes better than pan cake for me and without adding baking powder. It's more healthy than Roti Canai or Roti Prata. You add a bit or totally left out oil is OK.

After the flour cake is ready, you can eat as the way you eat pan cake. For my convenience, I have already added the ingredients I like in the batter. You can add any ingredients you like. I like the salty taste, so I made Green Onion Flour Cake.

Free style cooking let you feel relax in a busy day :)

大餛飩 Big Dumplings


每次整理照片就越整理越餓,像這樣冷颼颼的夜晚, 就該來一碗。 晚餐弄個大餛飩湯, 沒白飯也行。就覺得餓,話寫不了這麽多了。。。。

Every time tidy up the photos I feel hungry and hungry. It's a cold night. Should have one bowl of it. A pot of big dumpling is enough for dinner. Rice is not necessary. Oh... empty stomach, I think I have to go now...

鮮奶油鷄肉鳳梨比薩Pineapple Chicken Pizza

今晚吃什麽之~鮮 奶油鷄肉鳳梨比薩 + 蘑菇鷄肉鮮奶油湯

我們家不想喫飯的的時候,我就做比薩,噢, 應該說有材料,有感覺,我就做比薩。比薩的topping 是很隨性的,你可以放任何的材料,素素的也可以。除了番茄醬,我這次想用其他的醬汁, 就做了這個。 我們家吃比薩,被要求一定要配鮮奶油湯, 這樣也好, 有湯配, 吃起來就不會太乾 ^_^

Sometimes, we just don't like rice meals, so I made pizza. I think I mean if I have ingredients and I have feel, I make pizza. The pizza topping is always free style, just add anything you like. Other than tomato paste, I would like to make some different sauces. We would like to have cream soup every time we have pizza as request. I think it's good too to have soup with pizza. It's won't taste too "dry" when eating pizza.

MyCook蛋包飯 MyCook Egg Pocket Rice


這個蛋包飯有什麽特別呢?我沒看過人家煮過蛋包飯, 我試過, 但蛋液不夠包不起來,也不知要包成什麽形狀, 這個太成功了, 成功在衹用一顆蛋就行了。 這是一人份的炒飯,我自己的限定是一天一顆蛋就夠了, 這樣就符合我的要求。 圓形的蛋包飯,OK嗎?

What makes this Egg Pocket Rice so special? I never see people cook it. I tried but couldn't wrap up the rice because of not enough eggs and no idea what shape it should be. This is amazing. I used only ONE egg.

This is fried rice for a person. I use to limit my egg consumed by one egg per day. It has fulfilled my requirement, so much satisfaction indeed :) Is round shape OK ?

自製鮮奶油初體驗 Homemade whipped cream


好棒!好棒 !算成功的第一步, 不!我很滿意也開心, 要算成功,嘻嘻。以後不必擔心太貴, 可能又買不到的問題,又沒時間出門。。。,也不必擔心有“太多”的添加。



自家種的楊桃,再加自家做的鮮奶油,聽起來就好健康  :)


Wonderful! Oh, I'm so happy I did it. The outcome of "experiment" is so satisfied. This ease my worry of the increasing price of dairy products, unable to get it sometimes, too busy to go out .. and less worry of  "too much" additives.

Home planted starfruits and home make whipped cream. It just sounds so healthy :)


自制鷄精 Homemade Chicken Essence


很簡單的東西我一直都沒去做,終於都實踐了. 儲備食材,以便日後料理,新鮮無添加,可取代鷄精塊的使用, 更天然, 也可讓食物更具風味。因爲不曉得,日後要煮什麽, 所以不必過度調味 。。。^_^

If I don't start, I won't start. Finally, I got it. Cooking is simple but still need time to prepare and arrange. Storing cooking ingredient is good and saved your time for later use. No additive, to replace the use of chicken cube or can chicken stock for more natural and increase the taste of cuisines. If you don't know how it will be used for your cooking, don't over seasoning ...

恬院三色黃梨炒飯 Garden three color pineapple fried rice

來自自個后院的香料和食材,黃梨炒飯,有你無法想象的好吃,粒粒米都吸入了黃梨汁,每吃一口飯都充滿了黃梨的香氣, 當然,還有來自院子的天然香氣,完全是大自然的味道。。 配上一碗冬瓜鷄湯, 補充蛋白質的香煎魚,晚餐這樣子OK了 :)

The herb and long beans are from my garden.  I used them to make  pineapple fried rice. You can't image how yummy it is. When the rice absorbed the pineapple juice, every bite in your mouth will full of fragrance of fresh pineapple, plus the fragrance came from the garden. Totally fragrance from the mother of nature. What else for the dinner? How about winter melon chicken soup and fried fish? :)

椰子飯coconut rice

好久沒貼文了,發生了很多事,真的有點力不從心了。還好還有照片,應該是沒有要我放棄的意思。。。(嘻)

先用椰子飯開場吧!是的, 是椰子飯不是椰漿飯,有什麽不同嗎?椰子飯的做法比較少油脂,但一樣很香,這樣子的一餐也不失營養噢!

How's everybody? Something has been dragging me. Hopefully, things will go smooth day after day. Some photos still kept in my memory card remind me " don't give up". Maybe it's just a comfort excuse ... :)

I would like to start the post with "coconut rice". Yes, it is cooked with coconut instead of coconut milk. It consists less oil but still has nice fragrance as "nasi lemak" ...

鬆軟原味起司蛋糕Puffy and soft original cheese cake


需要 250g ~ 300g 奶油乳酪來做個軟密的起司蛋糕? 換個口感,  鬆鬆軟軟的, 也不錯喔!
這次用起司片做, 因為買了歐洲牌子的起司, 乳香味較重, 想說用來做蛋糕應該也不錯, 果然, 不錯.. 鬆軟再加上香氣, 在你想要對她多一點回憶, 她很快就消失無蹤了 ....

唉啊, 沒記錄, 我也忘了怎麼做 .... 

Need 250g~ 300g cream cheese to make mousse-like cheese cake? I think it's not too bad to try on puffy and soft cheese cake.
I used sliced cheese  because I just bought some Europe brand sliced cheese. The smell is good so I think it'll be good to make a cake too. Yes, I'm right. It tastes good and smell good as well. 

I thought I'll have lots of memories of it but it disappeared so fast. I could hardly remember it ...

O, dear, I forgot to write down the recipe   .......

牛奶土司(中筋麵粉) Mini Milk Soft Toast


誰說中筋麵粉不能做麵包? 最近都找不到常用的有機高筋麵粉, 也懶得再去找, 反正一開始做麵包就是用普通麵粉, 那就拿普通麵粉來做就行了. 製做過程沒添加任何化學添加物, 只用了無漂白麵粉.

 我沒有土司模, 就卷成長條型就可以了. 做好切片, 要怎麼吃, 隨意 ^_^

做出來的土司也是很軟的唷! 做麵包不必特地跑去烘培材料專賣店, 用到處都買得到的普通麵粉就行了, 哈哈!
這裡的烘培材料專賣店的材料都是大包裝小包, 沒標示牌子, 成份, 你想我會買嗎? 我也沒那閒功夫開車到10里外的專賣店 ......

A lot of people think that we need high gluten flour to make soft bread but it's ok for me to use normal flour which have about 9% proteins  to make the toast. Lately, I couldn't find any organic bread flour which I use to make bread. I am too lazy to look for it, so I just use whatever flour I have in my house. When I was learning how to make breads, I used normal flour. It won't sound strange to me.

 I don't have toast mold, so just shaped it into long oval. When it was ready to serve, just sliced it and all done.

P/s  I used unbleach flour and I did not add any artificial additives.

花生燕麥餅Peanut Oat Cookies


年過了才有時間做餅, 可真是沒"閒" .  我做的"曲奇" 牛油放得比較少, 這在配食譜的時候對我而言,  要想一下.  這個餅乾也沒放泡打粉或小蘇打.  做了兩盤, 第二天就吃完了, 應該是不錯吧 :)
小時候喜歡吃曲奇(cookies)多過餅乾(biscuits), 現在聞油色變, 肥滋滋, 算了吧! 下午茶, 吃個一兩片無傷. 想想油麵粉的比例是1:2 或2:3 (一般食譜), 就表示每吃一片就吃進去 1/2 或2/3 片的油, 要節制啊!

Cookies without baking powder, baking soda and less butter ...

夢幻起司蛋餅 Fantasy Cheese Egg Rolls


大家好, 好久不見, 明天是周末, 想好要準備什麼早餐了嗎? 一份蛋餅, 再加上一杯咖啡好嗎? 喜歡起司的朋友們, 有沒有聞到起司味了? MyCook的蛋餅是無油的喔, (除了備鍋時的第一片). 如果用不沾鍋的話, 一點油都不需要.
不油的蛋餅, 腸胃負擔較小, 當早餐不錯又有飽足感. 

做基本蛋餅, 讓不喜歡起司的人, 可以不加, 喜歡的人就撒在表面就行. 好好吃喔!!

For those cheese lovers, have you smelled of the cheese?
Mycook's egg rolls are oil less, except the first piece (a bit of oil added to the pan to make it unsticky). If you use non-stick pan, definitely you don't need to add any oil at all.
It's good to have it as breakfast. It's not oily and satiety.
You can make the  original egg rolls and let people choose whether they want to add cheese or not. If you like cheese, just spread it at the top of the egg rolls, yummy!

味噌黃金豆腐 Miso Golden Doufu


2016 年的第一個貼文選了福氣的豆腐, 討個好兆頭, 祝福大家富富貴貴. 

黃金豆腐是將軟豆腐整型, 再淋上我特製的味增. 熱熱軟嫩的豆腐, 搭配香甜的材料, 與醬汁一口吃下, 一口再一口, 再一口 ....... 

First post in 2016, I chose doufu cuisine. "Fu" in Chinese sounds "Good Life". Wish you all have great and wonderful life. Happy New Year !!

Golden doufu use soft doufu and shaped with an egg layer. Let the Golden Doufu dip in my special miso sauce. One bite has a taste of  warm and soft doufu,  fragrant sweet fresh ingredients and the sauce. More bite? .....
