廚房筆記 Cook Notes ~ 調味四君子


【蔥、薑、蒜、椒--調味四君子】

蔥、薑、蒜、椒,人稱調味“四君子”,它們不僅能調味,而且能殺菌去黴,對人體健康(健康食品)大有裨益。但在烹調中如何投放才能更提味、更有效,卻是一門學問。

~ 肉食重點多放椒 燒肉時宜多放花椒,牛肉、羊肉更應多放。花椒有助暖作用,還能去毒。 

~ 魚類重點多放薑 魚腥氣大,性寒,食之不當會產生嘔吐。生薑既可緩和魚的寒性,又可解腥味。做時多放薑,可以幫助消化(消化食品)。 

~ 貝類重點多放蔥 大蔥不僅能緩解貝類(如螺、蚌、蟹等)的寒性,而且還能抗過敏。不少人食用貝類後會產生過敏性咳嗽、腹痛等症,烹調時就應多放大蔥,避免過敏反應。 

~ 禽肉重點多放蒜 蒜能提味,烹調雞、鴨、鵝肉時宜多放蒜,使肉更香更好吃,也不會因為消化不良而瀉肚子。

自家肉骨茶Homemade Chinese Herbals Ribs Soup


好久好久都沒煮肉骨茶, 有人提議要吃, 想想也好, 當補補身子吧! 大部份人都用現成的肉骨茶材料包, 可我就覺得味道不夠濃, 自己配了些中藥材, 這樣煮出來才有古早味, 也才有自家的特色.
盛入阿婆留下來的碗, 真的好有古早的特色. 吃著一碗肉骨茶總會讓人想起, 辛勤工作的先輩們...也總會聊起那個故事...

It has been long time not cooking the ribs soup. Someone suggested and I thought it's not too bad to have some for improving my health. Nowaday,  most of the people use "bak kut teh" packet to cook the soup but I feel the taste is not strong enough. Thus, I used some Chinese medicine herbs as the main ingredients.It'll have taste like the old day and it's my own recipe :)

Putting it into a bowl left by granny, it looked like as if in the old day. Having a bowl of ribs soup always reminds you the hardworking of the ancestors who had traveled far away from China and their story.....

做粥口诀表

做粥口诀表

若要皮肤好,粥里放红枣。
若要不失眠,粥里添白莲。
腰酸肾气虚,煮粥放板栗。
心虚气不足,粥加桂圆肉。
头昏多汗症,粥里加薏仁。
润肺又止咳,粥里加百合。
消暑解热毒,常饮绿豆粥。
乌发又补肾,粥加核桃仁。
若要降血压,煮粥加荷叶。
滋阴润肺好,煮粥加银耳。
春季防流脑,荠菜煮粥好。
健脾助消化,煮粥添山楂。
梦多又健忘,粥里加蛋黄。
利尿消肿治脚气,赤豆粥里胜补剂。
消热生津又和胃,甘蔗做粥来补胃。
伤风感冒又腹痛,生姜上场来做粥。
滋肾补肝又明目,枸杞加上粥里香。

海帶蔬菜炒飯Seaweed Vegetable Fried Rice



下午有人肚子餓吵著要吃飯, 我說:"那我煮個炒飯" 剛好有一晚隔夜飯. 想不到這樣炒也很好吃, 又給我添了多一個食譜. 吃完了, 還想要, 沒了. 下次吧!

This afternoon, someone was asking for rice. I said :" Is that OK I cook you fried rice". It's good to have one bowl of rice was left yesterday. I never thought that vegetable fried  rice can be so tasteful. Happy for me to have one more secret recipe.
Some more? no more. Have to wait for next time :)

牙菇(慈菇)片 Arrowroot Chips


看到網路上很多人說牙菇, 還真的不知道是什麼? 怎麼這個菇這麼像馬蹄, 為什麼會叫"菇"呢?
今天去霸市, 好多哦! 不知道味道如何, 買了一些些試試. 忘了買刨刀就是自找麻煩, 一片一片的切, 還真花時間, 既然開始了就要堅持..:)
搞定! 嚐味後, 明白了為甚麼那麼多人推崇, 真的好吃 :)
All I can say is it tastes better than potato chips

做法很簡單:
1. 牙菇洗乾淨, 去皮
2. 刨成薄片, 不一定要薄到半透明, 有點厚度也很好吃
3. 瀝乾水份
4. 炸至有脆度

金瓜饅頭Pumpkin Mantou


買了金瓜, 當然要做饅頭. 這個饅頭晚餐, 也得來個湯配一配. 想說小朋有不喜歡饅頭, 所以只準備了一份, 那知道湯被搶光了, 哦! 我的晚餐...

A simple meal for dinner, pumpkin Mantou and soup. I thought the kids don't like mantou, so I just prepared one set of the meal. They liked the soup a lot. Save some for me, dear, it's my dinner!!

迷你優格吐司Mini Yogurt Toast

沒有吐司模, 小烤箱, 只能做這種迷你小吐司, 這次做的是優格吐司, 發得很好, 也很柔軟, 成功!
I have no toast mold. I only have small oven. Mini toast is just for me. I made mini yogurt toast. It raised well and it's soft. I think I have done a good job :)

【蛋餅Chinese Egg Rolls】

想起以前, 就這麼一份早餐, 加個豆漿, 好Add caption飽的早餐. 離開了, 再也沒有這樣的早餐. 這個親手做的蛋餅當早餐, 有種思念, 但不懷念, 現在對我而言是高油份的早餐. 可偶爾吃一吃, 感覺還是不錯. 想不到, 家人還是挺喜歡, 都說好吃 :)

Remembered of the old days, I used to have egg roll and hot soybean milk as breakfast. Since I left that place, no such stomach full breakfast anymore. I myself made the egg roll for breakfast brought up the feeling of missing of the past. However, I won't have much because it is a oily breakfast to me now. Feeling great to have it occasionally and never thought of my family like it too. They said "yummy" :)

麥香優格再生麵包Wholewheat yogurt bread(reused)



有機全麥麵包硬了, 丟了可惜, 想想.....哈哈, 讓她復活吧! 來點鹹味的, 後院得蔥, 好, 香蔥味也不錯 :) 用自製的優格做基本的麵包體, 再加入有機全麥麵包屑, 塗上奶油加上蔥花, 香噴噴得再生麵包出爐啦!.....

Oh, no ...the organic whole wheat bread is turning hard. I won't want to throw it away. I guess I just made it alive again. How about a little bit salty taste? Spring onion in back yard is nice. Basic bread made from homemade yogurt added with the organic whole wheat bread crumbs, spread some butter and some chopped spring onion. Here came the tasty new breads :) ....
