超軟蘿蔔牛奶100%全麥麵包Super Soft Carrot Milk Whole Wheat(100%) Buns

說到全麥,是很有挑戰性的。 他可能很硬,也可能味道沒那麽香。做的不好,可能吃起來像發糕。可是想到他比精緻高筋麵粉更好,還是要很努力去克服。

基本上如果沒添加,我用有機全麥粉,不會有像高粉那樣的筋度,也沒辦法包住空氣,所以不會發得很蓬。如果選擇吃全麥麵包,首先 你就得接受,他的口感一定不會和軟麵包一樣。其實,要吃健康的手工麵包,千萬不要和市面上的麵包相比。

這次做的麵包很軟,100%全麥, 很好。我最近沒去采購,用了簡單的材料。要口感更好, 可以加葡萄乾,蔓越莓乾,堅果等, 這樣也可以加些營養。

When talking about "whole wheat", it's really a challenge. The bread made of whole wheat can be hard and not so tasty. It could be taste like "Fa-Gao"(Chinese Steamed Cake) if something goes wrong. However, with the thought that it's better than fine high-gluten flour, I still should try harder.

Basically, without additives, I use organic whole wheat flour, it won't have much gluten as high-gluten flour and unable to wrap up the air, so it won't inflate much. If you choose to eat whole wheat bread, bear in mind, you should accept it won't taste like soft bread in first place. Little remind, never compare those healthy hand made bread with those sold at the bakery shops.

O! I can make it soft. I used 100% whole wheat flour this time. Good! Recently, I did go for shopping so I used simple ingredients. To make it taste better, you can add some raisins, dried cranberries ,nuts and etc. This will add more nutrition as well.

香蕉葉烤雞 Banana Leaf Baked Chicken


今晚吃什麽?~香蕉葉烤雞 + 滷蛋 + 清炒蔬菜

太多太多照片來不及上載,今天介紹的晚餐要家裏的“道具”幫幫忙,讓我們可以少累一點。鑊,鍋子,烤箱待命!

先準備好材料, 煮好蛋,鷄肉加入調味料腌製
1. 先煮鹵汁,加入煮好的水煮蛋,就可以交給鍋子,慢火煮。
2. 去院子剪了香蕉葉,鋪在烤盤,放入腌好的鷄肉,就可以交給烤爐。
3. 等差不多要開飯時,就可以炒菜了。

看似簡單,但準備材料,才是最累人的,把食物弄熟10到15分鐘,而備菜遠遠超過這個時間。因爲備菜很累,所以,把食物弄熟的這個步驟就交給鍋子,烤箱啦 :)

Banana Leaf Baked Chicken + Spiced Strewed Egg + Pan Fried Vegetable

Today I would like to talk about how kitchen wares help to prepare dinner. Wok, pan and oven please get ready.

Prepare the ingredients, boil the eggs, marinate the chicken with seasoning .
1. Cook the sauce. When the boiled eggs are ready, add the sauce, then you can hand over to the pan to cook the eggs with low heat.
2. Cut the banana leaves from my garden, lay them on the grill pan and fill up with the marinated chicken. Now, you can pass it the oven.
3. Pan fry the vegetable just before the to start dinner.

Preparing the to cook always consumes more effort than cooking. When I am tired, I let the cook wares to do their job. Thus, I can steal some time to sit down. 

田園米粉~長豆素炒米粉Garden Long Bean Fried Rice Noodles

院子的長豆結了, 還不錯,比上次進步了, 收成好幾條。加上一些院子采摘的香料葉,弄個素炒米粉, 就有一個很對得起自己的午餐了。

Backyard had grown more long beans this time. I guess I have some improvement of growing long beans. Plucked some long beans and herbs to cook fried rice noodles, is a wonderful thing to make myself a lunch..

香菇鷄鷄肉包Mushroom Chicken Steam Bread


超白的包子, 細細軟軟的,看了就不想吃, 想吃包子的時候,就弄一些較健康的的吧,是很花時間,準備内陷再加上要做包子皮,所以,不能常做。
自己做包子,内陷也可以很隨意。

When I see the "super" white, the texture is tight and soft, I can only imagine how much additive is added. Thus, when I feel like to have some steam bread what we call it "bao" or "BaoZi", just make it healthier with healthy recipe.
Yes, it is very time consuming. From preparing the fillings to making the dough and shaping, it takes a lot of time, so I can't always make it, although it is a very good fast food. If you have some kept in the freezer, just take it out and steam it for 10 to 15 minutes and your meal is ready.
Homemade baozi is good to let you add any ingredients for the fillings.

寫到英文稿的時候才發現一直被我當成是“點心”的包子, 其實, 原來是名副其實的快餐。有能填飽肚子的麵皮,含有蛋白質的肉類或鷄蛋,還有蔬菜,把内陷包著拿去蒸,營養不流失, 又容易儲存,想想以後可以多做包子 ^_^

滷白蘿蔔 Stewed White Radish


想念這個滷白蘿蔔很久了,之前買白蘿蔔煮湯,那白蘿蔔的味道很不好, 好久都不敢買了, 不曉得加了些什麽。實在是非常愛吃,還是勇敢再嘗試,還好沒怪怪的味道。 就是喜歡加了很多料去燉煮,這樣一鍋就差不多夠一餐, 再弄個蔬菜, OK啦!

I missed this dish for very long time. The white radish is not always available in supermarket. I bought some before but found some odd smells while cooking. I was too worry to buy again never know what has been added. I really love the dishes with white radish, so I tried to buy some again. It's ok.

I love to put  a lot of ingredients to stew in one pot. A pot is enough for a meal. I will cook some vegetable to ensure balanced diet.
