剛買了另一個牌子的無漂白麵粉, 揉出來的麵糰有點帶黃, 筋度感覺比較低. 做麵條的手感還不錯, 做出來的麵條也很好, 煮久一點也不會爛, 所以, 要有嚼勁或軟一點自行決定.
做了一些水餃, 和上次不一樣, 這次用有皺褶的包法, 皮做軟一點, 做不多就和面配著吃 ^_^
I just bought a new brand unbleached flour. After kneading, the dough is a bit yellow and less gluten. However, it's quite good to make noodles. You can boil a bit longer if you like soft noodles but I prefer they are a bit chewy.
I tried to make some dumplings in different way, softer skin and folding. I made just a few and cooked them with the handmade noodles. :)
